I’m in a super great mood right now! I must give credit to the 80-minute power yoga class I attended. It was still difficult and hot but I felt tons better! I think the morning class is going to be the best for me so hopefully I can make at least a couple classes a week.

Yesterday at lunch my father-in-law drove us to their place and I hung out with my mother-in-law and him while eating leftovers. I had another serving of stir-fry and it filled me right up!

After work I headed back over since they invited Adam and I to have dinner with them.

We snacked on some shrimp cocktail and cheese with crackers.

I sipped on a sweet red to start and had another glass with dinner.

My mother-in-law, Kay, cooked from this Rachael Ray cookbook.

Read the story under the title of the recipe, she makes this for her husband every wedding anniversary they celebrate!

It just makes the recipe that much more special.

The chicken, wine, herbs, and other ingredients cooked down in one pan. After the gnocchi cooked down in the water it was transferred to a pan of brown butter.

This recipe is definitely not the lightest, but oh man is it good! Check out the crispy pancetta on top!!

I also had one chocolate after for something sweet. I was definitely stuffed!

This morning I woke up ready to tackle yoga!

I snacked on a slice of bread with peanut butter and honey as a small snack/breakfast since I don’t like to be too full before class.

I left a bit early to drop Leo off at the groomer’s which happens to be right by my yoga class! Super convenient.

This class was difficult but I found myself going for poses I didn’t have the strength or courage to do just last week. Some I succeeded on and others, not so much. But I tried and I feel better about that then anything! I put my all into today’s practice and will definitely feel it tomorrow! Hopefully when I wake up at 5 A.M. I’ll remember to do some stretching.

Hey, Ashley! I may be able to do yoga in 4 states in the next week! ;)

Lunch was mostly using up what we had since we didn’t do a full-on grocery shopping trip this week. We’re leaving tomorrow (at the butt crack of dawn) to head to North Carolina and won’t be home until Wednesday night.

I made a pita pizza with tomato sauce, a little mozzarella and garlic. I mixed those together on the pita then baked at 350 for about 15-20 minutes.

I then heated up a Morning star Farms chik’n patty and topped the pizza with it. It was just like chicken parmesan!

On the side I had a small salad and some celery with a little goddess dressing.

I’m off to get things done! I just finished an exciting phone call(that involves the fun announcement coming later) and will be posting about it in the next few hours! :)
